Well we still don’t have an empty fridge. In fact, I think it is more full now. Probably due to my trip to the farmers market last week and a few BOGO sales at Publix. There are worse things than a fridge full of fresh vegetables though.
Not much to report for food waste: some cilantro, a small amount of French onion soup, a few clementines. Ricotta always seems to go bad in our house, but I managed to use it all this week. I found a recipe for lemon pancakes that was so delicious I actually want to buy more ricotta. I’ll be sharing the recipe later this week.
Here is the current state of our fridge:
English muffins were BOGO at Publix again and I just couldn’t resist. Kalyn posted a recipe for homemade English muffins which I really want to try, but we currently have 22, so I might have to wait. I am hoping to make and freeze breakfast sandwiches for busy mornings. Or maybe a few English muffin pizzas…
I would love some suggestions for using the cranberry flavor English muffins. What is the biggest challenge in your fridge this week?
